Homemade Sauce in 10 Minutes

Pasta sauce. The staple of Italian cuisine. Notorious for taking hours on end.

When I think of pasta sauce, I think of my nonna waking up at 5am to make handmade gnocchi’s and sauce for Easter. She was an incredible cook and my pasta sauce will never really do it justice. She was from old school Italy where food is no joke and everyone knows the more time you put into something the better.

But let’s face it. We live in a fast paced digital world. This isn’t old country Scardonia and sometimes, we need a damn good sauce that cooks in the same time it takes to cook boxed Barillo pasta.

This right here is it. I’ve gotten many compliments on my sauce and it really does take maybe 15 minutes top. (Sorry for the misleading title, I understand if you want to leave me here).

This yields enough to sauce up 7 people, roughly. It should also only cost you about $3, granted you have the spices.

Ingredients:

1/2 white onion

4 Tbs butter (can sub vegan butter)

4 garlic cloves (fresh is good, but I’m lazy sometimes and use the jar stuff)

2–28oz cans of crushed tomatoes

1/2 tsp of oregano

1/2 tsp of salt

1/2 tsp of sugar

2 tbs olive oil

Fresh basil chopped to your liking, sometimes I use the pre-packages, still fine.

Now, how do we do this? Sauce is complicated, right? I need to stir for hours and hours, then bake it, then sing Dominic the Donkey for times while running to the well for fresh water for my pasta, right?

Obviously not.

FIRST, cook the onions in butter till starting to soften and brown.

Then, add in the oregano and salt

Stir it around for 30 seconds

NOW, add garlic

Stir it around for 30 seconds

Add your tomatoes and sugar

Now, this is the most stirring you will do, stir for 10 minutes!

Finally, add your olive oil and basil.

You may want to add a bit more sugar or salt depending on your taste, if you choose to add more, make sure to give it a good stir.

Using a flavored olive oil can give it a unique flavor and really add a personal touch to the sauce as well.

Pair it with a Chianti Classico or any light Tuscan red wine.

As I always say, the best things in life are done in under 10 minutes with under $10.
